Ingredients

  • 1½ cups thick hung yogurt
  • ½ cup finely grated paneer
  • 3 tablespoons roasted besan
  • 1 teaspoon grated ginger
  • 1 small green chilli, finely chopped
  • 2 tablespoons fresh coriander, chopped
  • ½ teaspoon roasted cumin powder
  • ¼ teaspoon garam masala
  • ½ teaspoon salt, or to taste
  • ¾ cup breadcrumbs
  • 2–3 tablespoons oil for shallow frying
  • Agni Tamarind Chutney for serving

Instructions

Place the hung yogurt, grated paneer, roasted besan, ginger, green chilli, coriander, cumin, garam masala and salt in a mixing bowl.

Mix gently until evenly combined. Avoid overmixing, as this can make the kebab mixture too soft.

Cover and refrigerate for 30 minutes.

Divide the chilled mixture into eight equal portions.

Lightly oil your hands and shape each portion into a small, flattened patty.

Spread the breadcrumbs on a plate and gently coat each kebab.

Heat a thin layer of oil in a heavy frying pan over medium heat.

Place the kebabs in the pan without overcrowding.

Cook for 2–3 minutes on each side until crisp and golden.

Transfer to a paper-lined plate and serve immediately.
