Smoky Punjabi-Inspired Dip

Roasted Red Pepper Garlic Pickle Dip Recipe

A creamy vegetarian dip made with roasted red peppers, thick yogurt, roasted cumin, food-grade mustard oil and bold pieces of Agni Garlic Pickle.

Ingredients

• 3 large red bell peppers
• 1 tablespoon food-grade mustard oil
• 1 cup thick hung yogurt
• 2 tablespoons Agni Garlic Pickle, finely chopped
• 1 teaspoon roasted cumin powder
• ½ teaspoon Kashmiri red chilli powder
• 1 tablespoon fresh lemon juice
• 2 tablespoons roasted chana dal or roasted gram
• 2 tablespoons chopped fresh coriander
• Salt to taste

Instructions

1. Heat the oven to 230°C or 450°F.
2. Place the whole red peppers on a lined baking tray.
3. Roast for 20 to 25 minutes, turning once, until the skins are blistered and darkened in several places.
4. Transfer the hot peppers to a covered bowl and leave them for 10 minutes.
5. Peel away the skins and remove the stems and seeds.
6. Pat the roasted pepper flesh dry so that the finished dip does not become watery.
7. Heat the food-grade mustard oil briefly until aromatic.
8. Allow the mustard oil to cool.
9. Place the roasted peppers, hung yogurt, roasted chana dal, roasted cumin, Kashmiri chilli powder, lemon juice and cooled mustard oil in a blender.
10. Blend until creamy but not completely liquid.
11. Fold in the finely chopped Agni Garlic Pickle and fresh coriander by hand so that small pieces remain visible.
12. Taste and adjust the salt only after adding the pickle.
13. Refrigerate for at least 20 minutes before serving.
